Last week I reached out to see what types of things my friends (that’s you!!) would like to see on the blog. A lot of you gave me great feedback and ideas on things I can create here on Between the Pine, so I just wanted to say a big THANK YOU to all those who responded. Know your voice is heard and keep your eye out for your ideas coming to life throughout the summer!
To kick things off, one of my sweet readers mentioned easy meals made in the slow cooker that are healthy. I was so excited about this because even I have found it challenging to find recipes that are wholesome that involve a slow cooker. I was determined to make a recipe that required minimal prep time, and contained protein, vegetables, fresh ingredients, and whole grains.
These slow cooker fajita quesadillas check all of the boxes. With less than 10 minutes of prep time, it is realistic to make on those busy weeknights. I have been making these for the past couple of months and they are a huge hit in the Adams home (so Drew approves of them). Something I love about these is you can personalize them with your toppings and filling. For me, I like extra veggies and plain Greek yogurt. For Drew, he likes extra cheese and chicken. It’s simple to let everyone make their quesadilla their own way when the veggies and meat basically cook themselves.
I know that eating healthy can sometimes feel like an uphill battle- especially those days when you work 8-12 hours and want to invest time in your friends and family rather than spending over an hour prepping a homemade meal when you get home. My hope is that this recipe will find it’s way into your home and remind you that eating healthy can be fun and simple.

Slow Cooker Fajita Quesadillas
Prep: 10 minutes
special equipment: Slow Cooker
slow cooker ingredients:
3 bell peppers
2 boneless chicken breasts
1 packet of your favorite taco seasoning
1 cup monterey jack cheese, shredded
plain greek yogurt
cut the three bell peppers into 1 or 1/2″ strips
cut and halve the onion
place cut peppers, onion, chicken breast, and taco seasoning in the slow cooker. set slow cooker on high for 4 hours or low for 6 hours
shred chicken once cooked
to make quesadillas:
in a large skillet, place a tortilla and fill with slow cooker ingredients, and monterey cheese. cook on medium-low until the tortilla is crispy and the cheese is melted.
top with desired extras and enjoy!
