Spring is here and I think my heart could explode with joy. The days are starting to feel a little longer, gardens are coming back to life, and vibrant colors are making their way back into this world. It’s even supposed to be sunny Saturday which means I can run away to the mountains and maybe find a wildflower if I’m lucky.
For me, spring is a time I am reminded how much I love the sunshine and all colors that go along with it, which in turn inspires me to create colorful plates of food. So the Spring Pistachio Salad- what is this all about?
This salad can be a main course, or a great side. I love it because it combines complex carbohydrates (these make you full longer!!) with protein but in a way that is simple and beautiful. Lately my days have felt hectic and far too busy, so finding time to create a simple recipe is quite relieving.
Since we live far from family, we are spending Easter with some of the sweetest of friends, and I am so excited to bring this dish to share. I don’t know about you, but sometimes bringing a dish for others to eat can be quite overwhelming. The fear of messing up, or no one liking it stops a lot of people and causes us to resort to pre-made, store-bought dishes. But I want you to know that I believe in you. It’s okay to try and maybe mess up a little. This recipe is a great place to start because it is simple and straightforward which allows you to either stick exactly to the recipe or step out of your comfort zone and personalize it yourself. Pistachio Spring Salad

makes: 4 servings
3-4 cups kale
1/2 cup quinoa, uncooked
1/2 cup pistachios
juice of 1 lemon
olive oil (1-2 tbsp, your preference)
cook quinoa according to package.
using a vegetable spiralizer or a cheese slicer, ribbon the carrots and cucumber
toss together the kale, carrots, cucumber, pistachios, and quinoa
drizzle with dressing right before serving. enjoy!
