Hello friends! I hope this weekend has been a restful one and that you were able to try the White Chicken Chili. I love how weekends cause me to slow down and as I think about it, weekends seem to be the only time I have a quality breakfast. When the workweek starts, I am on the struggle bus in the mornings trying to wake up on time. Anyone with me?
So I have a solution for all of us non-morning people! And even if you are a morning person, this is still a great way to keep your mornings going smooth. These breakfast burritos take less than 30 minutes to make, and you end up with breakfast ready to go for the next 10 days. I encourage you to try this recipe out and see if have more energy throughout the day by not skipping breakfast.
Like most of my recipes, this is a recipe you can add or take away anything you feel. Cooking can be intimidating for some, and recipes can feel like rules- but that is not what it is about at all! By all means take this recipe and put your own twist on it. I hope your week is filled with glimpses of joy and you can celebrate those moments around a table, or like me, running out the door with breakfast burrito in hand. Enjoy!

makes: 10 burritos
one dozen eggs
1 yellow onion
8 oz container of mushrooms
1 tsp olive oil
2 cups spinach
1.5 cups cheddar cheese
10 whole wheat tortillas

in a bowl, crack the eggs and scramble them all up with salt and pepper. set to the side
dice the onion, and wash and slice the mushrooms
heat a large skillet to med/high heat and sauté the onions in the olive oil for 5 min
add the mushrooms in and continue to sauté for 3-5 min
add the eggs and cook until eggs appear shiny
remove from heat and while the eggs are cooling, set up a assembly line to make the burritos (it makes it so much easier)
tear a square of foil off, place the tortilla on it, and add:
- 1/3 cups of egg scramble
- a pinch of cheese
- a handful of spinach leaves
roll it all up and place burritos in the freezer!
to re-heat in the mornings:
unwrap the burrito from the foil. Place on a plate and re-heat in the microwave for 2-3 minutes. wrap it back up in the foil and out the door you go!
if the tortillas are tearing when you roll it up, heat them up in the microwave for 10-20 seconds and then try assembly the burrito. it makes them more flexible and less likely to tear!
add fresh herbs or siracha to personalize your breakfast burritos!
