Happy almost Valentine’s Day friends!! I used to never really understand the point of this holiday and my family joked about it just being an excuse to eat chocolate. But as I thought about it this weekend, I realized something really really important about Valentine’s day. Essentially, it is a day to celebrate with others. Whether that is in the sense of a relationship or with friends, it’s a day we have designed to spend usually sharing a meal or dessert together. And this makes me really excited because when there is more than one person, this means people are gathering together and we all know how I feel about gathering.
So in the spirit of gathering and all things chocolate, I give you black bean brownies! Have you ever heard of black bean brownies? I came across them a while ago on Pinterest, but my first reaction was “ew heck no”, and I left it at that. So if that’s you right now, don’t worry I get it. Last week I thought about this weird combination again and decided to give it a try. And let me tell you friends, after one bite I forget there were even black beans in this. Mine have a hint of coconut to them, which really compliments the chocolate. Go ahead and try them out for yourself and I hope you get the chance to share them with someone you love.
Black Bean Brownies

Bake: 20-25 min
Total: 30 min
Makes: 8x8 pan or 2-3 small dishes
15 oz can black beans, drained and rinsed
1/3 cup coconut oil, melted
1/2 cup sugar
1 tsp vanilla
3 tbsp unsweetened cocoa powder
1/2 tsp baking powder
1/2 cup chocolate chips
1/3 cup shredded coconut
preheat the oven to 350 F
start off by mashing the beans. you can do this in a blender, food processor, or with a fork
in a stand mixer, add the beans, eggs, sugar, coconut oil, and vanilla
next add the cocoa powder, baking soda, chocolate chips, and shredded coconut. mix all ingredients until combined
oil an 8×8 pan or 2-3 small dishes (whatever you plan on using)
pour batter into pan, and bake for 20-25 minutes or until your brownies pass the toothpick test. enjoy!
you can never go wrong with ice cream on top!
