Hello friends! The sun has really started to break through here in Seattle and man, how sweet it is! Those are the words that have been running through my mind this entire week and I find it fitting for these banana pops.
I have really tried to find the joy in those in-between moments of life this week. I was catching myself pointing out all the negatives far more than the positives, so I decided to do something about it. Through acknowledging the sweet in-between moments this week I saw a shift in my entire attitude on situations. Being content is tough, but learning to work through those hard moments is sweet. So here’s my challenge to you- this week find time to write down three things you are grateful for each day. Feel free to share them with me or another friend. Life is a gift and a really sweet thing- let’s not forget that.
Okay but on another note, BANANA POPS. I am a sucker for sweets and Doritos. But since Doritos have already been perfected, I’ll keep working on fun ways to satisfy my sweet tooth. Frozen bananas are the best because they have a similar texture to ice cream, but are not only healthier- but cheaper! This is a classic recipe of mine because it is simple and can be personalized. I love how cooking allows you to be creative. So I have a basic outline recipe below, but feel free to add other toppings that are just right for you! Makes: 6 banana pops
1 cup chocolate chips
1/2 tbsp coconut oil
1/4 cup almonds, crushed
1/4 cup pistachios, crushed
1/4 cup coconut flakes
6 popsicle sticks
cut each banana in half and put popsicle sticks in each half
melt the chocolate chips in the microwave or stove, stirring everything 30 seconds
put melted chocolate in a mug, and dip the banana pops in the chocolate
decorate with pistachios, almonds, and coconut
freeze pops for at least 10 min and enjoy!
store in the freezer to keep fresh
