I started working on this recipe in January with the heater on full blast, slippers keeping my feet warm, all while wearing my XL sweatshirt. I really wanted something that would hit the spot for the weeks in Seattle where it rains/snows every day and the sun hides. But now the sun is trying to peak out and giving us all hope of being tan one day. As spring starts to show promise, I am still craving this sandwich and have now decided it’s perfect for all seasons. And you want to know they best part? I had the honor (again!!) of teaming up with Erika over at Mayden Photography for this shoot.
Name of this recipe: Balsamic Mushroom Sandwich
What I really wanted to name this recipe: The best balsamic mushrooms on French bread with creamy goat cheese and green onions that I usually eat like 3 sandwiches of instead of 1 because I love it so much.
Thoughts on the best name? Same, I think the second one.
Okay so if you are wanting to have friends over but are terrified to make food for them this is your recipe people!! Drew hates mushrooms yet asks me to make this at least once a week…still haven’t told him this is a mushroom sandwich but he totally knows. So my point is you can’t go wrong with this sandwich. Really. I promise.
So here are the dets about this recipe. It tastes like you slaved over it for hours and added a million ingredients but in reality it takes 15 minutes to make and only 6 ingredients. You should high-five the closest person next to you for this. Flavorful and simple, it is the perfect recipe to try out if you are having friends over. Don’t be nervous- you can do this!!

You’d be surprised at how much you can learn about each other at the dinner table too.

Balsamic Mushroom Sandwich
Prep: 5 min
Total: 15 min
Makes: 2 sandwiches
4 slices french bread
2 portbello mushrooms
2 tsp olive oil
2 tbsp balsamic
3 oz goat cheese (or however much you’re feeling)
1/4 cup green onions, chopped
wash and slice the mushrooms into long strips
combine the green onions and goat cheese, set to the side
on medium heat, add olive oil and mushrooms and cook for 5-7 minutes. Add balsamic and cook for an additional 1-2 minutes
toast the bread, spread the goat cheese, and divide the balsamic mushrooms between each sandwich. enjoy!
