Happy Monday friends!! I hope your weekend was filled with nourishing meals, mountains, and maybe some wild flowers, too. This weekend Drew and I made our way back to Kansas City to visit friends and family. I love going back but woof, leaving never gets easier.
On another note, I am so excited about this green smoothie! I have been making it almost every morning the past week because it is so refreshing. Full of vibrant greens that boast in tons of vitamins and minerals your body wants, it’s one of those things you just feel good about drinking. And I can’t just leave it at that, so I will geek out on you because based off your feedback, a lot of you love learning about the food we eat!
To preface, this smoothie is different than “juicing”. Juicing strips the fibers out of the fruits and vegetables, which results in a loss of vital nutrients. Don’t get me wrong I LOVE a good juice, but for a daily routine a smoothie with whole fruits and vegetables is my go to.
I used SuperTracker to run a nutrient analysis on this smoothie, and here are the facts I found based on a 2,000 calorie diet. This smoothie provides 100% of your daily vegetable needs, 50% of your fruit needs, and 380 calories. And just for fun, let’s go in depth about each ingredient.
Cucumber– crisp and crunchy, cucumbers are known for their vitamin K. Vitamin K is essential for blood clotting and assists calcium in building strong bones.
Mint Leaves– Mint is an herb so there is a million and one health benefits of this little leaf. But it is most commonly known for helping with alertness and allowing one to focus.
Avocado– Media has brought the avocado back into the spotlight even with its high fat content because fat can be a good thing! Avocados are high in monounsaturated fats (AKA what are known as the “good fats”), B vitamins, potassium, vitamin K, vitamin C, and honestly the list could just go on and on. Long story short, avocados are higher in fat to keep you full longer, help you absorb certain vitamins, and can even help lower cholesterol.
Spinach– this leafy green is dense in a handful of vitamins and minerals including: vitamin A, vitamin C, vitamin K, folate, iron, calcium, and iron. Also, spinach is high in insoluble fiber which helps push things through your digestive system.
Bananas– a good source of potassium, but an even better source of vitamin B6. Vitamin B6 is a hot topic right now, and health benefits include promoting cardiovascular and cognitive health.
Lime Juice– mostly water, but does contain vitamin C which helps support a strong immune system.
Pretty cool, huh? All of those health benefits packed into 12oz. Breakfast on the go, post-workout, and a midday snack are all great ways to incorporate this green smoothie into your daily routine to get those vitamins and minerals. Makes: 12 oz smoothie
1 cup cucumber, diced
1 frozen banana
1 cup spinach
10-15 mint leaves
juice from 1 lime
5-10 ice cubes
Place all ingredients in the blender and blend it up!
